Liquid CO2 Spices Up Food

Herbs and spices are really the seeds, leaves, or roots of plants, ground up. The process of grinding is very critical to preserving as much of the flavor and aroma of the spice as possible. The heat from grinding can cause the "essential oils" that impart the flavor to just evaporate. Ideally, the plant material processing would be more grinding than mashing. Mashing would squeeze out the oils from the final product.

Cold grinding is a process using liquid CO2 to flash-freeze the unground product so it can shatter in the grinder rather than get mashed. Essential oils are preserved and the texture of the finished product is more uniform and attractive. Liquid CO2 is also germicidal, enhancing the keeping quality of the herbs by killing micro-organisms that could cause spoilage.
